Beef and Red Lentil Sausage Rolls

May's lunchbox recipe from Sarah Moore Wellness is a healthy and yummy sausage roll alternative.

  • Tomato salsa
  • Carrot + cucumber wheels

  • Homemade strawberry milk (blend 3/4 cup plain milk and 4 strawberries until smooth - best made in the morning for recess)

These sausage rolls are the perfect lunch for a picky eater. They’ll love the flakey pastry, tasty filling and dip. You’ll love that they’re getting a good dose of iron and fibre!

Beef and Red Lentil Sausage Rolls

  • 1/2 cup rolled oats
  • 1/2 cup red lentils
  • 1 brown onion, finely diced
  • 500g lean beef mince
  • 1 tbspn tomato paste, salt-reduced
  • 1 tspn dried Italian herbs
  • 1 tspn smoked paprika
  • 2 sheets puff pastry
  • 1 egg, lightly whisked
  • 2 tbspns sesame seeds
  1. Blitz the rolled oats in a blender until the texture of breadcrumbs.
  2. In a large bowl, thoroughly mix the oats, lentils, onion, mince, tomato paste, herbs and paprika. Cover, and refrigerate for 2 hours or overnight.
  3. Preheat oven to 180C and play two baking sheets in the oven to heat.
  4. Remove the puff pastry from its pack and lay plastic down on the bench to defrost slightly.
  5. Cut each sheet of pastry in half lengthways.
  6. Roll 1/4 of the mixture into a log shape, and lay in the middle of each rectangle of pastry.
  7. Brush one edge of the pastry with the whisked egg, and roll over to seal (finish sealed side down). Repeat with the other 4 rolls.
  8. Cut each roll into 4, brush with the remaining whisked egg and sprinkle with sesame seeds.
  9. Carefully remove the baking trays from the over, spray generously with olive oil and place the rolls on the rolls on top. Return to the oven immediately and bake for 20 minutes or until the pastry is golden.
  10. Allow to cool before storing in the fridge for up to 3 days or freezer for 1 month. Defrost frozen rolls in the fridge and reheat in the oven for 15minutes at 180C.
