Curried Egg Roll

Curried Egg Roll

2 eggs, boiled
1 tablespoon natural yoghurt
2 tablespoons corn kernels
pinch of curry powder (optional)
1 grainy wholemeal roll
1 lettuce leaf, torn

In a small bowl, mash the eggs together with the yoghurt. Stir through the corn and curry powder. Spread the mix on both sides of the roll, top with a lettuce leaf and then put the two sides together.
